Blue Suede Cupcakes

So I wanted to make some sort of dessert because I had planned on going to a bible study for the first time in a while and I wanted to bring something. I looked through The Cupcake bible & tried to find a recipe that I wouldn’t have to buy too many items for. I found the blue suede recipe. It had a lot of the same ingredients as the red velvet, but there was cream cheese. Later on I found out it is exactly the same as red velvet just with blue dye and the cream cheese was for making the frosting from scratch.I decided that I was going to make them mini size just to try them out like that. I put on my super cute Minnie Mouse apron my Gramma got me then like last time I did the dry ingredients, then stirred the food coloring into the cocoa powder.It was more of a teal color than I thought it was going to be. This time I was more careful to not make a huge mess, but of course I still got some on the counter 😦 Then the butter milk & vanilla. I forgot I had my awesome Mickey Mouse measuring spoons! I beat the sugar and butter for 4 minutes then the icky eggs. Then I mixed in the cocoa mix into the sugar mix. Now what I didn’t realize last time, in the directions it says to alternate with adding the buttermilk and the flour mix into the sugar mix. Last time I did all the flour and then all the buttermilk. Opps. Well at least I did it right this time. Then the baking soda & vinegar got folded into the blue mix.  I baked them for about 10 minutes. For the frosting I didn’t want to make it from scratch and I still had a whole can of it from the red velvet recipe so I just used that. I added some blue food coloring to make it blue. Then came the long task of frosting them all. I got better as I went along, but I still think frosting mini cupcakes are harder than regular sized ones. I decorated them with blue sugar 😀 Next time I make these I will make them regular sized, I’m not sure why but they seem like they aren’t right, they were good, but just not good enough. I’m thinking it may have to do with the fact that they were mini and maybe the size matters with this recipe. I’m not sure. Also with the dark blue color its kinda hard to see when they are done. I think I burnt a few of them :/ opps. But they turned out fine. Oh and the blue die stained my hands way worse then the red. Mesage me if you want the recipe.

Red Velvet Cupcakes

So my brothers new girlyfriend asked to bake with me sometime, so we decided on the red velvet cupcake rescipe. When she arrived we took a quick stop at Albertsons and picked up a few things we didn’t have at the house. They literally only had Albertson brand cream cheese frosting (which we found rather odd). We also bought coca powder & buttermilk & a chocolate bar for decoration. When we get back we decided what caking cups we want (animal print) and get to work. First we combined the flour & salt. Then we measured out the cocoa power. The directions then state gradually stir food coloring into cocoa in a small bowl until blending and smooth. And what we got was not. We then realized we needed two 1oz bottles of red flood coloring & with all the red we had most likely only added up to 1oz. So off to the store we went. She had to drive this time since it might have been a very bad idea if I drove at this point. I was still wearing my apron. And to add to the fun of going back we could not find the food coloring! It wasn’t by the baking stuff, it was by the spices 😦 We also picked up some snacks.  Then back to the cocoa & flood coloring. This time it worked rather lovely. A very deep red. In another bowl we combined the buttermilk and vanilla. Then with an electric beater we beat the sugar and butter for four minutes. This seemed like a long time, but by the end it was very light and fluffy. Then came the nasty eggs, one at a time of course. We then added the red cocoa  mix to it. It was very odd looking!  Then the flour mixture. It started to look like ground beef, this really grossed Sarah out. Ok this next part we both thought was rather odd. In a bowl I mixed vinegar & baking soda, it bubbled. It said to gold into the batter and to no used the mixer. After all of that the batter looked very red and grainy. Very odd! We baked them for 20 minutes then repeated. Once they were cooled I frosted them then came the chocolate! Since my mother isn’t a big fan of coconut ( that’s what the recipe called for to top it with) I thought we could top it with chocolate. So what I did was use a potato peeler & carved out some chocolate for decoration! I was rather proud of myself at this point haha. These cupcakes were amazing! My brother ate one after the other, my parents loved them, my pharmacist loved hers too! I will most defiantly make these another time! I don’t think I wold do anything different with making them, just make sure I have all that I need so I don’t have to make more than one trip 😀 Oh and not to make a mess with the food die. Opps. Truffle Brownie Bites

So for my dad’s birthday I wanted to make him something. And of course he & my mother are on a “diet” gag. So I looked in my handy dandy Cupcake Bible for a mini recipe & found que music Truffle Brownie Bites. Yum! They looked good & simple, I needed to get some confidence back since I totally botched the chicken from a few nights ago. Anywho collected all my ingredients ( just message me if you want the recipe) semisweet chocolate chips, one stick of unsalted butter, sugar, 3 eggs (brown & nasty) flour, whipping cream & sprinkles. Then of course all my other supplies, baking cups, measuring cups etc. I preheated the oven than got to work. I combined some of the chips with the butter & microwaved it for 30 seconds. First try didn’t go so well, barely melted. The second round got both the butter & the chocolate melted. Then I added the sugar. These three things mixed together was kinda nasty & I was very disappointed how gross it smelled.  Then came the eggs (ew) and vanilla. Then came the flour, it called for 1 cup minus 2 tablespoons. I thought that was rather odd. Salt then into the muffin cups they went. I used what I had left over of the silver, blue poka dot & green poka dot cups. AND I used my new scooper!!! Yay! It was so easy to put this mix in since my scoop wasn’t broken! Yay! I baked them for 15 minutes then let they cool. Some of the first batch were a little small so I made sure to fill up the cups more with the second batch. And they turned out a lighter brown that I thought they were but that’s ok 🙂 Ganache! I was pretty excited about this part. So I placed the whipping cream into a small saucepan & brought that to a simmer. The directions then said after it was brought to a simmer take it off & add the chocolate off the heat. I didn’t think the chocolate was going to melt but it did ( it probably helped I used the mini chips) After this I set up my station. cupcakes, ganache, sprinkles. At first I dipped the cupcakes into the ganache then placed them into the sprinkles, way too many sprinkles, but I did a few like this just cuz I thought they looked awesome. For a few I had to use a knife & spread it on like frosting. But when it came to sprinkles it worked best just to sprinkle a few on. I dropped a few but mostly I think I did ok 🙂 They turned out lovely! Very simple! The brothers were fans. Pat said he wanted more but I said he had to wait until Dad got some since it was his birthday! Mom tried one right after she brushed her teeth & couldn’t really taste it 😡 but I thought they were very yummy! And I didn’t make as big of a mess that I thought I was going to!

Funny Bunnies

EASTER! So for Easter my family got assigned to bring a dessert to the big family shindig. So we made Funny Bunnies! They are carrot cupcakes with bunny faces! As usual I gathered the majority of my ingredients. And the battle of the carrot cake begins once again. And this time its more pathetic. So my to grate my carrots my mother & I find the hand-held grater that you spin. But of course the handle is mia so we had to go in the dark pit that is the plastic cupboard to try to find it. Taking way way too long. Once we found the missing piece I got right to work. Peeled the carrots & cut them into pieces that could fit. Ten minutes went by me trying my hardest & only the smallest amount came out. My mother said it looked like baby food. Plan B. Salad shooter. I got the regular sized salad shooter (even though the pieces of carrot were going to be bigger than I liked) and soon found out that it was broken. Plan C. Gigantic Salad shooter. And this was a tad bit ridiculous since I only needed 1 1/2 cup of the carrots. After that I lined the tin with the festive baking cups I bought. I than, in a large bowl, added the dry ingredients, flour, baking powder & soda, cinnamon & nutmeg 🙂 Then in a medium bowl I added the sugar,canola oil, brown eggs & vanilla. This was interesting to mix. Nasty & thick. Then I added this to my dry mix & also added the carrots. The carrots really stood out this time since they were so big. I then used my scooper (broken thanks to SOMEONE who used it for ice cream D:< ) Then baked them for 24 minutes. While I was doing this my Mama was preparing the candy.We did it a little differently then the book. I bought decorative eyes, for the ears & nose marshmallows, cheeks strawberry whoppers, bow ties gum & for the mouth red candies. With the help of Pat’s fancy pants knife she cut the marshmallows in half. It was more of a rolling motion to cut them so they wouldn’t squish in a weird way. She also cut the whoppers in half for each cheek. For the bow ties we soften them in the microwave but couldn’t swish them how we want just by hand. So we used cleaned needle nose pliers. This worked out fabulous!Well the first one my mother did & she tried to frost it before it was cool. lol. Melted bunny.  So after the cupcakes were baked & cooled we began decorating.We frosted them with just regular white frosting.  We tried to shape the ears & placed them on, they were oddly shaped. At first we used toothpicks to keep up the ears, but found that if we just placed them closer to the center of the cupcake it turned out fine & still left enough room for the face. We used pink frosting for the center of the ears, ghetto as it was we just used ziplock bags with a cut in the corner. We then placed the eyes on the face. These eyes seriously made our bunnies look like they were under the influence! Then the nose, mouth, awesome bow tie then chubby cheeks. My Mama thought they needed whiskers. So she made purple frosting, and we found that it turned out better if instead of doing three individual lines to do a  U then add the middle line. We haven’t tried any of them but I think they turned out pretty awesome! Next time I think I would try to find less crazy eye candies. But I loved the candies my Mama bought! I am excited to see what my family thinks! Happy Easter!!

Carrot Cake Minis

Ok so Monday I made Carrot Cake minis.I gathered my ingredients then lined my tin with the green & white baking cups I bought on sale at Micheal’s 🙂 I then thought it was best if I grated the carrots before I started on anything else. My mother gave me the bowl grater, I thought that her giving me that was because the salad shooter didn’t have  a part  to get the  carrots grated small enough. After an hour of grating the carrots ( I kid you not) she said we did have a part for the salad shooter that was small enough & she only have me that small of a grater for the garnish on top. (The book calls for toasted shredded coconut, but we aren’t a fan of coconut). Seriously?! After it was already time for Smash, so I took a little break to watch that. After I got my musical fix for the day I mixed together the dry ingredients. Brown sugar, flour, baking soda, salt, cinnamon, nutmeg & cloves. Once again I wasted too long of a time doing other task, this time it was tearing our kitchen apart in look for a 1/8th tsp for the cloves. I gave up & just guesstimated. I then stirred in the oil & eggs (brown of course). Looking nasty! Then came my stupid carrots & vanilla. This mixture was extremely runny. I even looked over the recipe after I was done making sure I did it right because of how runny it was! I did it correctly. I baked them for 15 min then let them cool. While they cooled I got caught up on my correspondences. lol. After they were all cooled I started the process of frosting them. I cheated,  just bought frosting. Cream cheese frosting.ew. This was interesting. Minis are kind of hard to frost because they are so petite. But I got the hang of it & it was a nice time 🙂 I added a little piece of grated carrot on each one. I thought that made them look super fancy! For some of them I barely put any frosting on them so I could enjoy them. I’m not a fan of frosting. These minis turned out very nice. My mother took some of them to her bible study & I was told the ladies really enjoyed them :). Next time though I will use the salad shooter, also I would use thicker baking cups. These are pretty greasy cupcakes. 😀

Tangy Raspberry Minis

So I planned for the family birthdays I was going to make Tangy Raspberry Minis. I went to Joanns & bought a mini cupcake tin finally 🙂 yay! Ok so first I lined the tin with the mini baking cups I bought, so cute! (while rocking out to Pandora)I put the flour, baking soda & power in my large mixing bowl, not paying attention to the directions…I then had to dump it into a smaller bowl to mix because I needed to blend the sugar & butter together in the big one. I then added the egg (brown from our nasty chickens of course) & vanilla & buttermilk  & finally my dry ingredients. This mixture was a lot thicker then I thought it would be & a lot easier to put into the cups. This time I made less a mess because I did use a scooper 😀 I then put a raspberry in each one. I ate alot more than I used that night hehe. The recipe said to sprinkle with course sugar but I forgot to get that, so I just used regular sugar.When they were done baking a realized I pushed the berry in too far, they were suppose to stick out a little, but I thought the raspberries were so big I had to push them in a little bit. Opps, thats ok, just something to try next time. After I tried to make the glaze. It was a made of milk & powered sugar. But when I tried to “drizzle” it I just sank into the minis. I’m not to sure why because they were all the way cool. So I’m thinking I just didn’t stir it enough or I did too  much.  Anyways they were very good!!! Lots of my family members loved them, or at least said they did to not make me feel bad lol. 🙂 But my parents weren’t able to try them since Nick got hurt at his tournament & had to head home. The minis were all gone by the end of the partes. So I will have to make them again soon so they can try them & I will master that glaze!

Magically Minty Cupcakes

So, only the third post I have made something that wasn’t very good. lol. I made magical minty cupcakes, to be festive since it is March. It was rather simple. Just add the water, oil, & eggs ( brown, from our chickens of course) to the mex plus mint extract. I bought gold cups to be festive :), I had an interesting time trying to pour the mix into the cups without making a mess lol. Baked them, they smelled lovely & came out great. After they were cooled I practiced my “decorating” skills. I just bought the decorating basic book, icing and the little tip set. It was my first try really 🙂 Practice makes perfect! But unfortunately I didn’t like the cupcakes. They were nasty. haha. Too strong of a mint taste, and they weren’t that big of a hit with the family, just Nick. No surprise 😀

Regular sized Mini Doughnut Cupcakes

So a few days ago I looked through The Cupcake Bible, trying to see which recipe I wanted to try first. I decided go with something simple to start with. I thought the Mini Doughnut cupcakes looked good. But since I only had a regular muffin cups, thus regular sized mini doughnut cupcakes.Before anything else I mixed together the sugar & cinnamon I would later roll the cupcakes in. So that was the first day I had ever hear the cooking phrase “flour muffin cups”. So that was a new experience. So I Pam-ed them added the flour & made a huge mess. Then I mixed together the yellow cake mix with what it said on the box & per the recipe added nutmeg. I LOVE nutmeg. Spooned the mixture into the muffin cups & baked for 20 min. Then it said to remove cupcakes from pan. Easier said then done. In my first batch a few of them didn’t have bottoms. After I then rolled them into the sugar/cinnamon mix & placed them on a cooling rake. The second batch was a lot better since I kind of figured out the flouring thing. I thought they were pretty good. And they were a hit with the family.My mother preferred the ones without bottoms because the sugar/cinnamon mix stuck better with the inside then the outside.  My father who is trying to stay away from carbs couldn’t stay away…opps. 🙂 I kept the left over sugar/cinnamon mix for toast yum
